Victory Lap-5lbs. lost I will take that....Week2 Round2 (Recipe Alert)


Good morning everyone!

Today starts week 2 and I am feeling pretty amazing.  Not because I had a big loss.  Not because my body fat changed.  (God Lord... it has not moved!) But today I realized that I have been consistently walking 3 miles at once.  This is pretty big for me!-- Because as I look back over my life I honestly do not remember a time when I have ever been able to do that!  Sure I move around.  I grab a mile here and there several times a day.  But I did not believe that I could
                                                                                    actually walk for 60 minutes non-stop.

I CAN and Will do ALL things through Christ Who gives me the strength.
NOT only can I do it... I KEEP doing it.  Honestly, I wanted to quit this morning.  30 minutes in all I could do is watch the clock.  PARTIALLY because the random playlist I was listening to was horrible and partly because I was feeling every step in my calves, thighs, core, and lower back.  I should note here I no longer use the hand rails that are on the treadmill.   "Holding" them makes it just a little easier.  I am so balance challenged that this is a real struggle for me!  SRSLY reminded of  a childhood toy... "Weebles wobble but they don't fall down"....HizRib wobbles but she WON'T fall down. (At least that is what I am telling myself!!!)

I simply refused to give in.  I had this thought.  The God that created everything gave me the Son that makes all things possible.  This is no different.  If the Son who gives the strength to do anything... lives in me... then why do I not have the strength to finish?

WEEK 1 Round 2 298 lbs.
WEEK 2 Round 2 293 lbs.
Body Fat 60%
Muscle 25%         Will start BEFORE and AFTER photos for every
                             10lbs lost.-- As much as I dislike full body photos!

So here is a sample of what I am eating.... I have to be honest.  I can not do boring, bland, or the same thing every single day, every single meal.

Over the weekend, I smoked some Chicken Breast.  These are 6 oz. breasts but that's ok.  How you pair your meals is where you win the battles. My go to sides for this chicken would normally be Potato Salad and BBQ beans.  I am not swearing them off forever.  Just using moderation.  I decided on a Taylor Farms bagged salad; Southwest Style and a REFRESHING cucumber salad.  Cucumbers have many benefits. The one I was looking for was filling up the plate WITHOUT adding a ton of unwanted calories.  NEVER have I made a salad like this without OLIVE OIL.  Now don't get me wrong.  OLIVE OIL in moderation is good for you.  IN--FACT my Italian blood demands it!  Poppy stop groaning! This weekend I discovered that the salad lost NO FLAVOR whatsoever when I decided to skip it.  I made this choice because I used the dressing for the Southwest Salad that came with it.  NO need to double up.  (Livestrong does an excellent job of explaining the benefits of eating cucumbers including weight loss.  Recipe below.)  SO finger-licking good... I shared with the work chicas.  Best compliment tho?  Cucumber salad looks like it was store bought.  I love a great presentation.

EASY Cucumber Salad

Serves 12
4 Cucumbers
6 Roma Tomatoes (they contain less seeds)
1 Purple Onion (can omit; but I LOVE them)
2 Dry Package of Italian Salad Dressing Mix
2 TBSP Apple Cider Vinegar

Slice or dice cucumbers, tomatoes, and onion in a large storage bowl.  I love using my food processor for this part.  The little cubes are so pretty when plated.  Add salad dressing mixes and apple cider vinegar.  Stir well.  Chill at least 30 minutes for flavors to meld before serving.
